Choc Mint Tarts
There is nothing in the world quite like the combination of chocolate and mint. At Clean Mixes, we're big fans, but it's a flavour combination that can cause much discussion in families when it comes to things like a box of Roses Chocolates.
If you love choc mint as much as we do, then you're going to adore this gorgeous new clean treat recipe. Absolutely bursting with flavour and an equal amount of nutrional goodness, this is a beautifully minty, slightly sweet treat that is not to be missed.
These Choc Mint Tarts also happen to be GF, DF and free of refined sugars, AND RAW!! It has matcha - a green tea extract, to give the filling the lovely green colour. Matcha is packed with antioxidants and has been shown to impart a variety of health benefits.
In a nutshell, these Choc Mint Tarts are not only delicious, they are also packed with nutritious ingredients....what's not to love??
Choc Mint Tarts
Makes 3-6 tarts depending on the size of your cases.
Ingredients
Base
- 1 packet Clean Mixes After Dinner Mint Mix
- 2 tbsp coconut oil
- 2 tbsp honey
Filling
- 1 cup soaked cashews
- 1/2 cup coconut cream
- 1/4 cup coconut oil
- Large handful of mint leaves
- 2 tbsp maple syrup
- 1/2 tsp peppermint extract
- 1 tsp matcha powder
Method
For the base add the Clean Mixes After Dinner Mint Mix to a bowl along with the coconut oil and honey and mix through until it’s combined.
Press the mixture into your tart cases and place in the freezer to set while you make the filling.
For the mint filling, blend together the soaked cashews, coconut cream and mint until it’s a smooth paste. Then add the maple syrup, coconut oil, matcha and peppermint extract and blend until combined. Once it becomes our desired texture place it on top of the base and put back in the freezer to set for at least 15 minutes.
Serve with some grated dark chocolate on top and mint leaves to add an extra level of gorgeousness.
